    I now eat these bars as a regular staple of my low-carb lifestyle. They not only taste great, but keep me full as well. The bars are also an excellent source of natural fiber.

    Mary Jo Kringas, the founder of ChocoPerfection, uses the sweeteners oligofructose, which is derived from ground-up chickory root, and erythritol, which comes from fermented natural foods. These ingredients don’t effect insulin levels (zero on the glycemic index) or have a laxative effect like malitol.

    What more could you ask from a low-carb chocolate bar?

    I had read about these bars in various low carb blogs. Yesterday, I came across some at my local grocery store and decided to give it a try. I purchased the milk chocolate bar. I was pleasantly surprised. It was a bite of heaven. They are mildly sweet and have a creamy texture, as evidenced by the fat content. However, what pleases me the most is that they are sweetened without sugar or the use of malitol. I need to eat low carb due to medical reasons and I stray away from sugar alcohols due to gastric reasons!

    The description of these bars led me to believe they were made of premium chocolate with a Swiss-like texture and flavor. Not so at all. Don’t get me wrong; they were not disgusting or gross. They tasted mostly like chocolate. But they in no way tasted premium. The texture was too firm and they didn’t melt properly in the mouth. They also left a slightly metallic taste in my mouth. Erythritol is the best sweetener for chocolates in my opinion because it doesn’t produce the gastrointestinal distress that most sugar alcohols produce. But it is not as sweet as sugar and any good chocolate recipe should compensate for this by adding sucralose for its synergy. Also, I bought them because erythritol doesn’t have the nasty side-effects of maltitol, but these bars include another sweetener called oligofructose which is a type of fiber. It works on me the same way maltitol does, so I didn’t get any benefits of the erythritol.

    Back around 2000, Hershey came out with some erythritol-sweetened chocolate bars that were delightful, but I haven’t been able to find any of them in years. I’ll keep searching, but I’m not buying these bars again.
